If you use a Zatarain rice jambalaya mix, it's probably best to stick to the instructions on the box. I made some last week with some nice Portuguese sausage and shrimp, but added a can of Ro-tel diced tomatoes with jalapenos to spice it up. I didn't think it was bad, but my wife said it was way too spicy. I microwaved some the next day and yes, it was pretty spicy. If you're into spicy foods, not a bad idea.

I pulled out some venison last week that was vacuum sealed and frozen 3 years ago. It was as good as the day I put it in there.
Been cleaning out/reorganizing my mother’s crazy garage this week and she gifted me a barely used vacuum sealer and a big box of bags.
